With its darker red-brown hue and thicker, rougher bark than Ceylon Cinnamon, Cassia Cinnamon is a strong and potent addition to many dishes. The bark of the Cinnamomum tree is dried and cured in one thick layer, as opposed to the more delicate and plentiful layers found in the Ceylon variety.

Cassia cinnamon is great for use in curry recipes, tea infusions (such as chai), and mulling recipes, due to its stronger and sharper flavor compared to other types.
